Recipe: Interstate’s Coffee Cake

For brunch you can go big or indulge in something a little bit lighter, something more of a snack. That’s why Interstate’s walnut brown sugar crumble coffee cake is so perfect! 

Last year at the bRUNch Run Denver, they shared this tasty treat with us. We think it pairs great with coffee, coffee cocktails, beer or whatever your heart desires. 

Topping Ingredients

2 cups walnuts

1 cup sugar

1 cup brown sugar

¾ cup cold butter

1 tablespoon five spice

Cake Ingredients

1 cup sugar

2 whole eggs

2 cups half and half

4 cups flour

1¼ cups soft butter

1 teaspoon salt

1 tablespoon baking powder

1 tablespoon five spice

Directions

For the topping: place the walnuts, brown sugar, cold butter, 1 tablespoon five spice and 1 cup sugar into the robocoupe and process until combined and granular. Reserve for later. 

In mixer beat the eggs and sugar. Beat the mixture until it doubles in volume and turns white. Add remaining ingredients and mix on medium slow speed until batter comes together (aprox. 40 sec). Beat on high until batter is smooth (aprox. 10 sec). Line a metal half pan with parchment and grease. Pour in the batter and top with topping. Bake at 350 degrees in wind oven until a toothpick inserted into the cake comes out clean (approx. 30 min).
