Flourless Banana Flapjacks
1 ripe banana
1 large egg
1/2 teaspoon allspice or nutmeg
In a small bowl, mash banana to pulp with a fork. Add in large egg and nutmeg, mix well with fork. Pour onto hot, buttered griddle or skillet. Flip when flat spatula slides under easily.
1 lb apple, peeled, cored, diced
1/4 cup apple cider
1/2 cup sugar
1/4 tablespoon lemon juice
In a medium saucepan, bring cider and diced apple to a boil reduce heat to simmer for 20 min or until reduced by half. Stir in sugar and lemon juice, simmer, stirring occasionally, for 25-35 min until mixture turns caramel color. Cool immediately.
