New Year’s Day Brunch: Moco Loco for bubu

On New Year’s Eve, we celebrate the passing of another great year, but what about the morning after. January 1st is the perfect morning for brunch. What better way to start a new year, than with a great meal!? Kick off 2016 with something festive, warm and savory from bubu in Denver.



2 cups Mushroom

2 tbsp Garlic, ginger, and shallots

½ cup sake

½ cup mirin

2 cups cream

1 ½  cup demiglaze

2 tbsp canola oil

Salt & pepper

1/8 cup brewed coffee

1/8 cup cocoa powder

1/4 cup brown sugar

Meatloaf sauce

2 cups ketchup

¼  cup can chipotle

¼  cup honey

Salt and pepper


1-pound ground pork

2-pound ground beef

1 tbsp parsley

3 tbsp demi-glaze

3 tbsp Worcestershire

3 tbsp salt pepper mix

¾  cup kimchi

¾ cup ketchup

2 ½  cups panko

1 tbsp thyme

1 tsp garlic

¾  cup red bell pepper diced

½  cup mushroom diced

½ cup celery diced

½ cup carrots diced

½ cup onion diced

4 eggs

1 cup rice (white or brown



1. Saut. mushrooms for five minutes add garlic, ginger, and shallots stir for another minute.

2. Deglaze with mirin and sake

3. Add cream and demi

4. Cook on low heat until thickened.

5. Season with salt and pepper

Meatloaf sauce

1. Blend all together

2. Season with salt and pepper


1. Mix all together in a large bowl salt and pepper to taste

2. Form and coat with meatloaf sauce

3. Bake for 350 for 45 minutes covered 10 minutes uncovered

4. After all cooked plate it with cup of cooked rice place a slice of meatloaf and top it of with mushroom gravy
